“Kobe” is the popular name given to Japanese bred and raised Wagyu beef. “Japanese Black” is the most praised of all the Wagyu breeds and is the only type of Wagyu we offer. Furthermore, we only accept Kobe that has received the highest of ratings based on marbling, texture, color, and overall quality. You will not find any beef that has richer marbling, tenderness or flavor.
Our Kobe is raised on all natural high quality vegetarian feed, free of hormones and animal by-products, and are kept on feed up to 10 times longer than conventionally raised American cattle. This, in addition to the superiority of the cattle breed, is why our Kobe steaks are much larger in diameter than other beef steaks. Due to the size, and richness of the meat, it is Japanese tradition to enjoy Kobe in small, thin portions. Therefore, you will notice that our Kobe steak offerings are much different than those in our other beef lines. We offer traditional, as well as more conventional portions, and like to suggest that you try our thicker cuts as a “steak for two”. All Kobe beef received by our plant is accompanied by an official Calf Registration Certificate from Japan. This authenticates the origin and blood line of the cattle from which the beef was cut.
